Macadamia Nut-Pesto Fettuccine

PhotoIngredients:

  • 1 pkg. (9 oz.) fresh fettuccine
  • 3 cups basil leaves
  • 1/4 cup half-and-half
  • 3 tbsp. roasted macadamia nuts
  • 3 tbsp. Parmesan cheese, grated
  • 2 tbsp. lemon juice
  • 3/4 tsp. salt
  • 1/2 tsp. black pepper, ground

Directions:

  1. Cook pasta according to package directions, omitting salt.
  2. While pasta cooks, place basil and remaining ingredients in food processor; blend until smooth.
  3. Combine basil mixture and drained pasta in a large bowl; toss to coat. Serve immediately.
