Fruit-Filled Muffins

INGREDIENTS:

  • nonstick cooking spray
  • 1 1/2 cups flour
  • 1/3 cup sugar
  • 1 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/4 tsp. baking soda
  • 1/8 tsp. salt
  • 2/3 cup buttermilk
  • 1 egg
  • 3 tbsp. cooking oil
  • 1/4 cup of your favorite jam

DIRECTIONS:

1. Preheat oven to 400˚F. 2. Coat twelve muffin cups with cooking spray or line with paper baking cups; set aside. 3. In medium bowl, stir flour, sugar, baking powder, cinnamon, baking soda and salt; set aside. 4. In small bowl, mix buttermilk, egg and oil. Add buttermilk mixture to flour mixture. Gently combine (batter should be lumpy). 5. Spoon batter into cups, filling 1/4. Place 1 teaspoon of jam in center of each. Top with remaining batter. 6. Bake for 18 to 20 minutes or until golden. Cool for 5 minutes. Remove from muffin cups. Serve warm and enjoy!
