Beef and Vegetable Soup
Ingredients:
- 1 tbsp. vegetable oil
- 1 lb. stewing beef, cubed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 c. beef broth
- 3 c. water
- 1 (14.5 oz.) can of crushed tomatoes
- 1 ½ c. potatoes, cubed
- 1 c. carrots, sliced
- 1 c. celery, sliced
- 1 c. green beans
- 1 to 2 tsp. herbs of your choice (basil, oregano or dill)
- Salt and pepper to taste
Directions:
- Heat vegetable oil in a large soup pot. Brown stewing beef, add onions, and cook for 3 minutes.
- Stir in garlic, then add broth, water and canned tomatoes. Bring to a boil.
- Add vegetables, herbs, and salt and pepper to taste. Turn heat down to low, cover and simmer for an additional hour.
