Beef Tenderloin with Tomato & Parsley Salad

Salad Ingredients
- 3 small tomatoes, chopped
- 1/2 cup parsley, chopped
- 2 tbsp. shallots, chopped
- 4 tbsp. lemon juice
- 2 tbsp. olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
Combine all ingredients; add salt and pepper before serving.
Beef Tenderloin Ingredients
- 2 tsp. fresh ground pepper
- 1 tsp. salt
- 1 tsp. lemon pepper
- 1/4 tsp. granulated garlic
- 1/4 tsp. thyme, dried
- 4 lbs. beef tenderloin, trimmed
1. Combine all seasonings and pat mixture evenly over beef. Cover and let stand at room temperature 30 minutes. 2. Broil on a greased rack in roasting pan for 15 minutes, six inches from heat. Reduce oven temperature to 375°F and bake 30 to 35 more minutes, or until meat temperature reaches about 140°F. 3. Remove from oven; let stand for 10 minutes. Spread Tomato and Parsley Salad over top, and enjoy!
